Mamacita's Artichoke Dip with Salsa Fresca

8oz package of cream cheese (room temperature)
7oz shredded monterey jack; 1 oz for top (8oz total)
1 cup Mamacita's Salsa Fresca (drained)
1 cup coarsely chopped canned artichokes (drained)
1/2 cup mayonnaise
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
First pre-heat the oven to 400. Then mix the cream cheese, shredded monterey jack, and mayonnaise in a large bowl. Then add artichokes, Mamacita's Salsa Fresca, the salt, and the red pepper flakes and continue to mix until combined.
Spray an 8x8 (or close to it) glass baking dish with cooking spray, or oil the bottom and sides with olive oil. Transfer the mixture into the baking dish and top with the remaining monterey jack cheese. Bake in the oven at 400 degrees for 20 minutes, or until the top is golden brown and bubbly. Serve with cubed bread, toasted in the oven in a baking sheet!
