Mamacita's Salsa Fresca Sweet-Glazed Pork - Recipe #5

Mamacita's Salsa Fresca Sweet-Glazed Pork

Serves: 6-8
Prep: 20 min
Cook: 1 1/4 hr

Ingredients:
4-5 lb. pork loin (boneless)
1/2 cup Mamacita's Salsa Fresca (NOT drained)
3 heaping tablespoons brown sugar
1/4 teaspoon red pepper flakes
2 tablespoon olive oil
1 cluster of cherry tomatoes
2 teaspoons salt & pepper

Pre-heat oven to 400 degrees. In a bowl, mix salsa, brown sugar, red pepper flakes, 1 teaspoon of salt and pepper, and 1 tablespoon of olive oil, then set it aside. After seasoning the pork with the remaining salt and pepper, add 1 tablespoon of olive oil to a heavy skillet on medium/high heat. Once it's nice and hot, sear the pork loin on all sides until golden brown. Transfer the pork to a baking dish, pour salsa mixture over the pork and cover with lid of baking dish or aluminum foil. 

Cook the pork in the oven for about 45 minutes (check internal temperature to make sure it's done, around 160-170 degrees.) Let the pork rest and pour the pan drippings in a sauce pan to reduce for 15 minutes on medium/high heat.

While the sauce is reducing, roast tomatoes on a baking sheet drizzled with olive oil and salt and pepper at 450 degrees for around 15 minutes.

Slice the pork and serve with the roasted tomatoes, pouring that delicious glazed sauce over the top.
