Mamacita's Lettuce Tacos + Salsa Fresca Rice - Recipe #3

Mamacita's Lettuce Tacos + Salsa Fresca Rice

Serves: 6-8
Prep: 15 min
Cook: 20 min

Ingredients:
1 1/2 lbs. lean ground beef - use ground turkey or chicken for a healthier version
1 1/2 cups Mamacita's Salsa Fresca, drained
1/2 medium onion
2 tablespoons olive oil
1 teaspoon salt
1 can chili beans + 1/2 the liquid
2 heads of romaine lettuce
sour cream or greek yogurt
(optional) cilantro, avocado, and chopped tomato for garnish

Prepare rice according to directions to make 2 cooked cups of rice. Drain 1/2 a cup of Mamacita's Salsa Fresca while the rice cooks. In a medium skillet with oil, brown the ground meat on medium-high heat. While the meat is browning, drain 1 cup of Mamacita's Salsa Fresca, chop medium onion, and drain can of chili beans (save half the liquid). Stir the meat occasionally until mostly browned, then add chopped onion, salsa, and chili beans. Stir and let cook for another 5 minutes, and add salt and chili bean liquid and mix. Turn off heat.

(If the meat mixture seems dry, add more chili bean liquid or some Salsa Fresca liquid.)

When the rice is cooked, fluff with a fork and let cool, uncovered for 5 minutes and add drained salsa, gently mixing the rice with the salsa. Separate leaves of washed heads of romaine lettuce and place on a platter.

To assemble: take a tablespoon or so of rice mixture into the lettuce leaves, top with the meat, and garnish with sour cream, avocado, chopped tomato, and cilantro!

A nice side dish for these would be our Jicama Salad!
