Mamacita's Jicama Salad

1 medium/large jicama
4 cobs of fresh corn
1 can of black beans
1 small (or half a large) sweet onion
1/2 a bunch of cilantro
1 bell pepper (red, yellow, or orange)
1 cup of Mamacita's Salsa Fresca
2 tablespoons sugar
1 teaspoon salt
5 tablespoons canola oil
Peel the jicama and chop into small cubes and set aside. Slice the corn off the cobs (use a small bowl upside down inside another bowl, balancing the cob on the bottom of the small bowl with one hand and slicing off the corn with the other - all the corn will fall into the large bowl - use this bowl to mix all the ingredients!) Add cubed jicama into bowl with corn. Rinse and drain can of black beans, add to the bowl. Chop the onion and bell pepper and add into the mix. Rough chop all of the cilantro for a beautiful pop of green and sprinkle if it over the bowl of other ingredients. Mix with a wooden spoon until everything is tossed together.
For the dressing, in a separate bowl, combine Mamacita's Salsa Fresca with the sugar, zest and juice of the lime, salt, and canola oil. Once mixed, pour over the jicama and corn and other delicious vegetables, and toss it all together!
This works well as a side to the Grilled Chicken Sandwiches!
