Mamacita's Salsa Fresca South Western Sandwich

1/2 cup Mamacita's Salsa Fresca, well-drained
1/2 to 1 cup fresh arugula
2 slices of ham
2 ciabatta rolls (or any roll you like)
3 tablespoons butter
2 tablespoons mayo
1 tablespoon olive oil
1/4 teaspoon salt
black pepper, to taste
Butter inside halves of the rolls and place in a heavy, non-stick pan on medium to high heat, butter side down, until golden brown. Set aside and fry up slices of ham in the pan, flipping over once golden brown, then set those aside as well. Once the rolls have cooled slightly, spread mayo on each half.
In a small mixing bowl, combine eggs, Salsa Fresca, salt, and pepper. In the pan, on medium heat, add half the remaining butter and half of the olive oil. Pour half of egg mixture into the pan. Once eggs start to cook, use a spatula and gently lift sides to spread the egg to the edges, keeping the egg as one layer like an omelette. Flip over once eggs are firm and cook for an additional 30 seconds. Repeat cooking the remaining eggs for the second sandwich. Assemble the sandwiches: a slice of ham, one half of the eggs folded over, and top with arugula for texture and added flavor.
